⚠️ Allergy Alert: Contains Nuts (Almonds & Pistachios) Step into the World of French Pastry in this ADVANCED 3-day (2½ hour classes) hands-on Pâtisserie Camp, where students create Elegant Petit Gâteau-style Pastries entirely from scratch while learning real pastry techniques used in professional bakeries. Each day builds skill and confidence through structured pastry components including tart shells, silky fillings, Italian meringue, fruit curds, chocolate ganache, and molded chocolate garnishes—resulting in a collection of bakery-style showstoppers. 🍫 DAY 1: CHOCOLATE GANACHE & SALTED CARAMEL PEARL PETIT GÂTEAUX Students begin by creating rich chocolate ganache-filled tartlets (petit gâteau-style desserts) using freshly made tart shells. They learn how to achieve smooth, glossy ganache and finish their pastries with caramel pearls for texture, shine, and contrast. They also prepare components for the next day, including lemon, lime, and pineapple curds, along with decorative pineapple flowers. 🍋🍍 DAY 2: FRUIT CURD BOUTIQUE + ITALIAN MERINGUE PETIT GÂTEAUX Students create vibrant fruit curd tarts using lemon, lime, and pineapple curds, learning how to balance sweetness and acidity in elegant dessert form. They also prepare and pipe Italian meringue for a light, glossy finish and add handcrafted pineapple flowers for decoration. 🤍🍫 DAY 3: WHITE CHOCOLATE ARTISAN PETIT GÂTEAUX FINISH The final day focuses on refinement and artistry. Students create petit gâteau-style tarts filled with White Chocolate Ganache infused with Pistachios and craft molded chocolate garnishes for a polished bakery presentation. This is an ADVANCED Baking experience designed to challenge creativity while keeping techniques approachable. Students leave with a portfolio of Elegant Mini Pâtisserie Desserts and a stronger understanding of texture, flavor balance, and presentation. 🎁 INCLUDED WITH TUITION Each student will receive a copy of “Little Tarts” by Petit Gâteau to take home and continue creating these elegant desserts. Class Guidelines: *Please ensure long hair is all tied back PRIOR to arriving in class. *Participants will be standing for most of the class, please wear Closed-Toed shoes. *This is a drop-off program designed to foster independence in the kitchen. *Missed classes are non-refundable—please review our Cancellation Policy.
Cancellation Policy
Due to our need to purchase food and supplies in advance, we are unable to provide refunds once a class is booked. You may receive a credit toward another class if notified a week prior to the date of your registered class. You are welcome to send someone in your place to attend the class that you've purchased. The Art of Food reserves the right to cancel a class. Registrants will be notified by email or phone as far in advance as possible and will issue a credit for upcoming classes. Please review class information carefully. We cannot be responsible for allergies, food or other sensitivities that may be unique to an individuals medical condition. Please note our kitchen is not a gluten-free environment and may contain nut products and other potential allergens. Sick Student Policy: Students should stay home if they or any family members are experiencing symptoms of illness, only returning to class once they’ve been well and symptom-free for at least 24 hours. This precaution supports a healthy environment for all students and staff.
